Tossed green salad recipe

Tossed Green Salad.

• 1 head of lettuce, chilled
• celery
• cucumbers
• onion
• tomato
• green peppers
• radish
• carrots
• 1/4 cup of salad dressing

Hold a head of lettuce under cold, running water to wash it and loosen the leaves.
Pull the leaves off the head and shake off the water. Break each leaf into about three pieces and place the pieces in a large salad bowl.
Wash the other vegetables for your salad.

Trim leaves off celery, radishes, and carrots.
Now ask a grownup to help you.
Peel carrots, onion, and cucumbers.
Cut cores out of peppers.

Cut the vegetables into thin slices, or small pieces. Put everything into the salad bowl with the lettuce.
Just before you put the salad on the table, pour your salad dressing over it. Then with a large fork and spoon, mix or “toss” the vegetables to cover them with dressing

Sailboat Salad

• canned peaches
• lettuce
• toothpicks
• paper

Wash a lettuce leaf and lay it on a plate. Place half of a peach on the lettuce, with the round side of the peach down. Cut a piece of paper so that it looks like a sail. See Picture. Stick a toothpick through the paper to make a mast. Then stick the toothpick into the peach.
If you print the name of each of your guests on the sail, you can use the salads as place cards. Make a salad just like the sailboat salad, but leave off the sail.

Put cottage cheese or cream cheese in the hollow of the peach. Add a bright, red cherry.
Or fill the peach with mayonnaise, and sprinkle the mayonnaise with chopped nuts.

Easy hot dog recipes


• wieners
• hot dog buns
• relish, mustard, or onions

With a grownup’s help, fill a saucepan halfway with warm water. Place it over high heat on the stove.
When the water begins to boil, carefully place the wieners into the water so that the hot water won’t splash on you. Turn the heat down.
After a few minutes, take the wieners out of the pan with a fork. Let the water drain off. Place the wieners in the buns. Add relish, mustard, or onions, if you wish.

Tasty sandwich recipes

For two sandwiches use.

• 1/4 cup of canned tuna or potted ham
• 1 hard-boiled egg (boiled egg recipe on page 250 tells how to hard boil an egg)
• 1 tablespoon mayonnaise
• salt

Break the ham or tuna into tiny pieces with a fork. Chop the egg into small pieces. Put the meat and egg together in a bowl. Add mayonnaise and salt.
Mix well.
Spread the mixture over a piece of bread, or toast if you wish. Lay another piece of bread on top, and serve with slices of pickle.

How to make cheese sandwich


• slices of bread
• slices of yellow cheese
With a grownup’s help, light the oven.
Toast slices of bread in a toaster. When they are brown, remove them with a potholder. Place a slice of cheese on each slice of toast.
Lay the toast on a cookie sheet or aluminum foil and, with a grownup’s help, put it on the top rack of the oven.
When the cheese is puffed up and bubbly, a grownup can help you take it out of the oven. When the sandwich has cooled a little, it is ready to eat.

Easy to make cake recipes


It’s easy to make a cake from a cake mix that you get at the grocery store.
You add only water to some cake mixes. To others you add only eggs and milk.
Some brands even have a tin-foil cake pan inside the package. And many mixes have a small envelope of powdered frosting hidden inside the flour.
Cake mixes come in many flavors. There are chocolate cakes, yellow cakes, white cakes, orange cakes, lemon cakes, cherry cakes, banana cakes, and spice cakes.
When you make a cake from a mix, always follow the directions on the package carefully. Then you can be sure that your cake will turn out right.
Ask your mother to help you put it in the oven.

Recipe for molded gelatin

What’s for dessert?

• 1 package of gelatin dessert
• 1 cup of hot water
• 1 cup of cold water
• 1 large mold, or several small molds

Empty a package of gelatin dessert into a large bowl. Break up any lumps with a fork.
Fill a cup with hot water from the faucet and pour it into the bowl. Stir until all the gelatin mix has dissolved.
Then add a cup of cold water. Stir well.
Pour the mixture from the bowl into a large mold or into each of the small ones. Put the mold into the refrigerator.
An hour or two later when the gelatin is firm, take the mold out of the refrigerator. If you dip the mold into a bowl of hot water for just a moment the gelatin will slip out of the mold easily when you turn the mold upside down on a plate.
If you wish, put cream cheese or whipped cream around the gelatin.

Recipe for limeade and orangeade

To make limeade or orangeade, use a lime or an orange instead of a lemon.
It is even easier to make lemonade or limeade that comes from a can. Empty the frozen lemonade or limeade into a pitcher. Squash it. Then add as much water as the label on the can tells vou to.

Best lemonade recipe

Sips, salads, and sandwiches.

Hungry? Make a salad, a casserole, a sandwich, or a baked potato. Thirsty? Stir up some lemonade, limeade, orangeade, or hot cocoa. Want something sweet? Bake an instant cake, mix up some date-nut bars, or make an ice-cream cone clown. Those are some of the easy-to-make recipes that you will find on the next pages.


Measure large amounts in a measuring cup.

Measure small amounts with measuring spoons.

3 teaspoons are the same as 1 tablespoon.
4 tablespoons are the same as 1/4 cup.
16 tablespoons are the same as 1 cup.
2 cups are the same as 1 pint.
4 cups are the same as 1 quart.

For each glass use.
• 2 tablespoons of lemon juice.
• 2 tablespoons of sugar.
• 1 glass of water.
Slice a lemon in half and squeeze the juice into a cup. Take out the seeds.
Pour two tablespoons of juice into a glass. Add sugar.
Add water and stir well.
Taste the lemonade. You may want to add more sugar or more lemon to make it taste just right.
Put in ice cubes.
A drop of red food coloring will make pink lemonade.
